Chef T Treasures Work/Life Balance at Springwell
Chef T’s appreciation for food began with hot tea. As a child, she consumed great quantities of it, garnished with loads of cream and sugar. In fact, it led her to gain the nickname “TT,” supplanting her given name, Toleether Williams, and following her into her professional life. The name became so entrenched that even those around her may not know her real name. “Only one person at Springwell uses my real name,” says Chef T.But the most important part of her name isn’t “T” … it’s “Chef.” Chef T began her kitchen career in Buffalo, New York, where she attended culinary school. “It was a culture shock. I grew up in New York City, and suddenly I was in a quiet town. But I grew to love it.” Determined to continue her education, Chef T moved to Baltimore, where she worked at Oriole Park at Camden Yards and then M&T Bank Stadium as the lead cook for the VIP owners. “That was such a great experience.”She also cooked at several restaurants, including Bistro RX, of Love & Regret and Mahaffey’s, and was the catering chef at Coppin State. “I had a manager once who encouraged me to get all the experience I could, and I’ve tried hard to do that.” “I loved the work, but it was all consuming. Working became my life. When you work 16 hours a day, there isn’t time for much else.”Looking to find more balance, Chef T found opportunity at Springwell in August 2022 as the Chef Manager of the Main Building, home to the community’s Assisted Living and Memory Care residences. “I really appreciate the slower pace. I’ve done large and fast-paced kitchens, but I’ve never had something small. It’s a great change.” “I love having a regular schedule where I can give my all and my best, but in a limited timeframe. ”Chef T is excited to tackle Springwell’s menu and provide excellent, delicious food for residents. “I want them to experience new things. My frame of mind is to take food they are familiar with and elevate it.” “The team of cooks at Springwell is so excellent to work with. They are smart and talented, and I want to showcase their talents.” So far, Chef T is delighted with her job at Springwell. “The peacefulness I have in my job is priceless. Many kitchens are such negative spaces, but Springwell is such a peaceful and supportive environment.”
